No Bake Granola Bars

No Bake Granola Bars

Ingredients
1/4 cup unsalted butter
1/4 cup brown sugar
1/4 cup honey
1/4 cup creamy peanut butter
1 teaspoon vanilla extrac
t 2 cups old fashioned rolled oats (you could also use quick oats)
1/2 cup crispy rice cereal
3/4 cup Cheerios
1/2 cup Flaxseed
1/4 cup mini chocolate chips (I used regular sized semi-sweet chocolate chips this time)
Instructions
Place a piece of parchment paper in a 8×8 baking dish. In a large sauce pan combine your butter, brown sugar, honey and peanut butter and cook over medium-low heat until mixture is melted and bubbling. Once bubbling continue to cook for 2 minutes while stirring to prevent mixture from burning and sticking to the bottom of your pan. Remove pan from heat and stir in vanilla extract. Combine liquid mixture with rolled oats, rice cereal, Cheerios and Flaxseed. Pour combined mixture into 8×8 baking dish and press mixture down to make even and flat across the top. Sprinkle the your chocolate chips over the mixture and press gently with your fingers. Cover with plastic wrap and place into the fridge until mixture has completely cooled and set up. This takes about an hour or so. You can store this mixture in the fridge or on the counter-top in an airtight container for 4 or 5 days and they are still tasty! Notes Recipe should make about 10 bars.
