Gluten Free Cheesecake

Lemon, Lime, Banana Cheesecake
Gluten Free, No added sugar

Tip: You can substitute strawberries!!!!

Base Ingredients
1 packet of Rice Cookies (Gluten Free) or your favourite cookies
50gms (1,5oz) melted butter or margarine
(butter for a firmer base, margarine for a more crumbly base)

Finely crush cookies and add butter/margarine scoop mix into an 8″ square baking dish (I use a glass pyrex dish) Place in Refrigerator to set whilst preparing topping .

Topping Ingredients
500gms (1 lb)softened cream cheese (1 Minute in a microwave should be enough)
250mls (8oz) cream (either regular or reduced fat)
2 Tablespoons Lime Juice
2 Bananas (mashed with a fork)
2 Tbls Lemon juice (to add tang and acts as a natural preservative)
1 packet or sheet of gelatin
30- 50mls ( 1 – 1.5oz) of hot water (to melt gelatin)

In a Blender or mixer, mix cream and cream cheese together until smooth
Add fruit and mix in well, add lemon juice and gelatin/water mix continue mixing in until all ingredients are well blended. Pour on top of base and Refrigerate for 2 hours or until set.
