Egg Roll Mozzarella Sticks
12 pieces of string cheese
12 eggroll wrappers
oil for deep frying (suggestions peanut oil or extra light virgin olive oil less fat)
Place 1 string cheese near the bottom corner of 1 egg roll wrapper (keep remaining wrappers covered with damp paper towel til ready to use). Fold bottom corner over cheese, roll-up halfway, then fold side towards center over the cheese, moisten remaining corner with water & roll up tightly to seal.
Repeat with each cheese stick til done.
Heat 1/2 inch oil to 375 degrees place a few of the mozzerella sticks in and fry til golden brown about 30-60 seconds, watch carefully and turn to avoid burning 1 side.
Drain on paper towels, repeat til done.
Serve with a side of marina sauce (optional my kids eat them just like that)!
Now I haven’t tried it yet but I am sure these can be made in an oven -vs- frying spray a cookie sheet with pam preferably olve oil or canola oil flavored. Preheat oven to 350 degrees place mozzarella sticks on sprayed portion of pan and spray the mozz. stick as well lightly. keep an eye on them rolling over to make sure they are browning. I tried it with regular mozzarella sticks it worked but cheese oozed out more. So i put the cheese sticks in the freezer for 5 minutes before making them to harden them up not to freeze. It worked much better.
