Dorito Chicken and Cheese Casserole

3 cups cooked chicken, chopped (I used a rotisserie chicken)
1 cup sour cream
1 can cream of chicken soup
1 can of corn, drained
1/4 cup minced onion
2 cups cheddar cheese, shredded
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
1 medium sized bag of nacho cheese Doritos, crushed

Preheat oven to 350 degrees.

Lightly spray a 9×13 pan with cooking spray. Spread the bottom of the pan with half of the Doritos . Reserve one cup of cheese. Mix together remaining ingredients in a large bow. Pour chicken mixture over the Doritos. Top casserole with the remaining cheese and Doritos. Bake 30 minutes or until bubbly.

  1. Made this tonight and it’s a big hit. My mom and I added a can of cream of mushroom soup, replaced the onion with green onions, and instead of salt and garlic powder used a tsp of garlic salt. Really delicious. Only complaint is the Doritos on top get a little burned.

    • I’ve had the same problem with dishes using cracker crumbs on top. I’ve solved it by covering the dish loosely with aluminum foil. You can remove the foil at the end to crisp them up a bit if needed.

      I tried your recipe with your substitution and they were perfect!!! I found that when cooking the last 10 minutes of cooking a dish I added the Doritos on top of the casserole and it was perfect.

  2. I make this all the time! Big hit! I put in a can of rotel to spice it up some. To keep the Doritos from getting burned I cover with aluminum foil and you can take it off about 10 min before its done. Great recipe as listed above, I’m gonna try that way also!!

    • To do it with hamburger I mix cream of chicken cream of mushroom and can of rotel crush up doritos on bottom of pan then layer of hamburger and layer of soup mix keep going til all gone top with cheese and bake when done I like to add taco sauce and sour cream to mine

    • I make this with hamburger all the time. I put taco seasoning in it and add some salsa con queso. It is very good and before you eat it top with lettuce and other garnishments used for tacos and a little bit of taco sauce. It is always a huge hit with my family..

  3. Dorito casserole is awesome to which is 1lb hamburger meat chopped onions chopped green chilis cream of chicken cream of mushrooms can of pinto beans can of rotel and a jar of taco sauce. With shredded cheese

  4. When i make Mexican Chicken i use one can of Rotel, one can cream of mushroom, and one can of cream of chicken and use a bit of the broth from the boiled chicken to keep the bottom chips from burning

    • I agree, Rose. By the time they get through with it, it doesn’t even resemble the original recipe! LOL!!! This sounds delicious!

    • Any recipe that calls for cream of anything soup is far from healthy already. The soup is probably worse for you than the Doritos!

  5. I made this and I added pasta shells to mine it was so good. I think next time I am going to leave out the onions they over powered the meal and I think that I am going to us a can of cheddar cheese soup and not cream of chicken. And no Doritos on the bottom.

    • For our tastes & pantry I used a can of Mexi corn in place of regular corn & added some green chilies the second time I made it with good results. Now for my 2cents worth of opinion; changing a recipe a bit for extra flavor &/or sharing what worked well for you is always constructive on a recipe site, but I’m sorry Jack if you have nothing of use to add, perhaps you should troll elsewhere. Adults that cook are well aware of what is good for them or not… they do not need a lecture from you or me either for that matter.

  6. Looks like seashell macaroni and cheese with chicken added to it didn’t see any corn or Doritos. And It looks like yesterday’s vomit.

    • It’s sickening to ruin such good food by mixing it together just to say good Mixture to call a casserole. No wonder y parents can’t get their kids to eat this day and time.

  7. I too make this with a can of rotel and add a can of mushroom soup this makes it a little looser so I add a package of cooked egg noodles. This feeds a crowd and was right up our alley raising 3 boys. If I don’t have any rotisserie chicken I poach some chicken breasts in chicken broth and the can of rotel and add this liquid to the mix. Add a salad and you have a great meal.

  8. This was so delicious, All the family loved it and raved about it. There was not much left over but
    what little was we realized tasted even better the next day (if that is possible 🙂 I put a glass cover
    over my casserole and the doritos did not burn, they did get a little soft but that only added to the taste and we sprinkled more doritos over the top. I added 2 cans of corn instead of one because we love corn, Fantastic recipe!

  9. Oh my gosh, I did not read the comments before I posted but when I finally did I am laughing so hard, It is such a great recipe and people just kept changing most everything about it. If I don’t care for a recipe I just move on and don’t reply. Why change something that is so great?

  10. I made this tonight it was very tasty except the Doritos do get a little burnt on top. I would definitely use tin foil or put the Doritos on at the last ten minutes. I think it would be very good with hamburger also!

  11. I made this recipe as is (using low-fat soup and sour cream) for lunch today and hubby and I really liked it. Do you think you could substitute mixed vegetables in place of the corn?

  12. I made this tonite and didn’t cover it, which might have helped with mine being dry. With it being uncovered it dried out w/o ever getting “bubbly”. Again part of the problem may have been my heavy thick casserole dish and it never got very hot. Finally put it into a regular casserole and ran it thru the microwave 5 mins which helped alot.
    So my suggestion for future cooking is cover it so it retains the moisture. It was very tasty and hubby said he’d like it more if it was hotter.

  13. Those of you adding pasta – I assume you cooked pasta first then stopped casserole on top? Or did you cook it with the casserole?

  14. With all the changes, they turned it into a king ranch casserole. Just do it the way the lady said and stop
    with so many changes.
    I thought it look great as is and will try it as she has it.
