Cajun Hasselback Chicken
great for low carbers
2 boneless, skinless chicken breasts
4 oz cheddar or pepper jack cheese, sliced into thin 1/4 inch slices
4-6 oz. deli-sliced ham, cut into strips about 1″ by 2″
1/2-1 tbsp Cajun seasoning (just depends on how much you like)
Preheat the oven to 350 degrees. Using a sharp knife, make slits in the chicken breasts that are about 3/4 inches wide, making sure not to cut all the way down through the bottom of the chicken breast. Sprinkle the tops with the Cajun seasoning. Place the cheese slices and ham in the slits of the chicken.
Place in a slightly greased baking dish and bake 30 minutes, or until the chicken is cooked through.
